Chef-Restaurateur Par Excellence introduces the Best of
Southern Spanish-Moroccan Cuisine in Boracay Island
Al Andaluz, The newest restaurant venture of Binggoy
Remedios of Dos Mestizos fame opened to a full house last
October 12 amid the fiery sound of Castillian music and the
passionate moves of flamaco dancer’s from Manila’s Central
Flamaco led by Director Cecile de Joya and premier dancers
arichi Aquino, Binky Mendoza and Lee Echavez.
Al Andaluz’s menu is inspired by southern
Spanish-cooking, particularly the cuisine of Andalusia, one
of Spain’s most culinary-rich regions famed for its distinct
food and culture. It is home to ones of Spain’s most famous
epicurean exports-tapas. Southern Spain is also the world’s
largest producer of olive oil, with some of the fines
produced in Andalusia’s olive groves; as expected, olive oil
is the basic ingredient used in man of the region’s cooking
– here are also Moroccan undertones in the menu, the
southern Spanish region being close to Morocco and such,
many dishes are influenced by that country’s cuisine.
Anyone who sits in Remedios’s table in
Al Andaluz is sure to feast on these two staples –
tapas and the finest olive oil available in the market
today. Guests in the restaurant’s opening were given a
preview of Remedios’ superb menu which included such dishes
as
Gazpacho Andaluz (chilled tomato soup), langostinos
al Ajilla con Cous Cous (tiger prawns in saffron garlic
sauce with pesto cous cous); spiced Moroccan Chicken with
buttered dates and nuts; homemade flatbread with hummus con
pignoli (chicken dip with toasted pine nuts), among many
others.
Al Andaluz serves as Fairways and Bluewater Golf
Resort and Country Club’s signature fine dining restaurant.
Located in Newcoast, in the northern part of Boracay island,

Newport Creek Hospitality named as Management Company
for 5 Star Resort on the beautiful island of Boracay
Walnut Creek - Newport Creek Hospitality, an
international hotel management company with headquarters in
Walnut Creek, CA has entered into an agreement to manage the
spectacular 5- star Fairways and Bluewater Resort on the
island of Boracay. One hundred miles South of Manila,
Boracay is considered the Hawaii of the Philippines, and its

world by both Conde Nast and BMW leisure guide. The resort
showcases its 18-hole Graham Marsh designed golf course and

Kobe Japan - Forest Vestures Holdings, Japan and Newport
Creek Hospitality announced their plans to develop a
world class internationally branded hotel in the heart of
Kobe’s Harborland.
FVJ Holdings report that the Kobe market is prime for
such a development. In their statement: “We have been
studying the market for a long time and believe that Kobe is
now ready for a well known International brand in the
Harborland area. We have partnered with an American based
International hotel company, Newport Creek Hospitality (NCH)
to provide their expertise on this project."
NCH has offices in Walnut Creek California, Mandaluyong,
Philippines and another one to open soon in Osaka, Japan.
Their president and CEO, Gregg Pearson, has traveled to Kobe
on several occasions this year and has confirmed the same
confidence issued by Forest Vestures Holdings. Pearson
continued “We are in discussions with IHG ANA Hotels Group
Japan to brand this hotel”. IHG ANA Hotels Group is the
Japan operating arm of IHG (InterContinental Hotels Group),
which owns and operates Intercontinental Hotels and
Resorts®, Crowne Plaza Hotels and Resorts®, Holiday Inn
Hotels and Resorts® and Holiday Inn Express®, among others.
IHG ANA Hotels Group Japan launched the ANA InterContinental
co-brand earlier this year, and will launch six ANA Crowne
Plaza co-branded hotels by the end of 2007. “We believe that
IHG ANA is the ideal strategic brand operator to gain and
sustain the necessary market for this landmark development
project", adds the NCH executive.
Kobe is surrounded by water, lush countryside and mountains
that create a symphonic setting and global appeal ideal for
tourism. “Kobe’s tourism was among the strongest in the
Kansai area prior to the Kobe earthquake of 1995” said
Pearson. “We are seeing positive trends for the tourism
market to come back as strong or even stronger then ever
before.” The Kobe Harborland Project is on a fast track, and
should break ground in the early part of next year.” Both
FVJ and NCH are exploring other locations for additional
hotel development projects together in Japan. Pearson
confirmed that they will be working with IHG ANA on more
future endeavors.

Gregg Pearson, Senior Vice President of
RIM Hospitality announced that he will be leaving RIM to
launch Newport Creek Hospitality, an international hotel
management company with headquarters in Walnut Creek,
California.
A respected veteran in the industry with
over 22 years of experience, Gregg was the Regional Director
of Franchise Operations at Starwood Hotels and Resorts. He
joined Rim Hospitality where he was involved in all aspects
of operations with emphasis on business and organizational
development.
“The launch of Newport Creek Hospitality
is many years in the making,” said Gregg. “The timing is
impeccable with critical partnerships now in place and
incredible opportunities coming our way”, he added. Admired
for his ability to develop significant relationships, to
inspire his team to perform at their optimal level, coupled
with his visionary planning and passion for the industry, it
will be an understatement to say that NHC is destined for
success.
Gregg’s love affair with the industry
began as a Front Desk Clerk at a small Boutique hotel in
Salt Lake City, Utah. The romance blossomed while he trotted
around the globe and worked his way up at Interstate Hotels,
Grand Heritage Hotels, Westmont Hospitality, Tarsadia Hotels
and Rim Hospitality. This passionate journey included
working with major brands like Hyatt, Marriott, Hilton,
Sheraton, Holiday Inn and prestigious independent hotels
such as the famous Sunset Marquis Hotel, the Mondrian, and
the LeParc Hotel in West Hollywood, and the Horton Grand
Hotel at the famed Gas Lamp Quarter. Gregg’s career
continued to flourish while managing the Pacific Islands
Club Resorts in Guam and Saipan. Also at the Fairways and
Bluewater Resort in Boracay, Philippines, he and his team
hosted the famed Johnnie Walker Tournament attended by golf
legendaries Nick Faldo, Ian Woosnam, Jesper Parnevik, Ernie
Els, and others.
Gregg earned his CHA (Certified Hotel
Administrator) Certificate through the American Hotel and
Lodging Association and was a recipient of various
scholarships while studying hotel management at Brigham
Young University in Hawaii. Beyond the hotel walls, he is a
spark of light in his community as an active Rotarian, a
member of his Church and an appointee to the Antioch
Economic Development commission. His wife, Joy and their
three beautiful children bring endless joy to his life.
As the President/ CEO of the new
company, Newport Creek Hospitality, Gregg proudly expressed
that other hoteliers and international professionals have
enthusiastically joined him in this endeavor. The celebrated
team brings to NCH over 100 years of proven experience and
expertise in the hotel industry and corporate environments.
Newport Creek Hospitality will concentrate its presence in

Newport Creek Hospitality (NCH) officially announced the
opening of their Japan based office in Osaka, which will
serve as NCH Japan headquarters.
“We have been looking for the right office space over the
past few months” said Pearson, President and CEO, NCH. “The
Japan market has become increasingly important to us” he
continued. “We now have projects and opportunities in Japan
that far exceed our growth in any other region in which we
are currently operating”. NCH is an American based
International hotel company, with offices in Osaka Japan,
Walnut Creek California and Mandaluyang Philippines.
NCH chose Osaka to be its initial Japan base because of the
slew of activity they have in the Kansai region. “Our
pipeline consists of over 15 new and existing projects
mainly in the greater Kansai area, we feel Osaka is central
to it all” said Pearson. “It is also convenient for our
financial and strategic partners who either have main or
branch offices in Osaka”.
Pearson disclosed some of the rapidly growing companies
projects; “we are working on development projects in Arima,
Kobe Harborland, Kobe Sannomiya, Kyoto, Osaka, Nara, and
others. It is for that reason that we have decided to
officially open an office in Japan at this time, so we will
be strategically positioned and well equipped for our
